INGREDIENTS
VIRGIN COCONUT OIL (5O ML)
1 CLOVE GARLIC
1 ONION (FINELY DICED)
1 CUP GRATED FRESH CASSAVA (MANIOCA)
500 MLS WATER
1 FRESH COCONUT (CREAM) 100 MLS
PINCH OF SALT AND PEPPER
1 TBL SPOON CHOPPED CORRIANDER
METHOD
- ADD VIRGIN COCONUT OIL TO FRYING PAN
- ADD ONION AND GARLIC TO FRYING PAN AND FRY WITHOUT BROWNING
- ADD GRATED CASSAVA AND MIX WELL
- ADD 1 CUP WATER TO THE FRYING PAN AND KEEP COOKING UNTIL IT THICKENS (THE SAME PROCESS AS RISOTTO)
- ADD MORE WATER (1 CUP) AND KEEP STIRRING
- ADD COCONUT CREAM TO MIXED INREDIENTS AND KEEP STIRRING
- ADD CORRIANDER, SALT AND PEPPER
- ADD MORE WATER IF ITS TOO THICK , STIR AND SERVE.
