Knox and Leo's Island Salad

INGREDIENTS

2 large kumala, peeled and cubed
½ small cucumber, cut into rounds
3 spring onion leaves, sliced
3 bele leaves
4 green beans, trimmed and blanched
4 small tomatoes cut, in half
½ navara, cubed
2 tsp virgin coconut oil
1 lemon, juiced
1/2 clove garlic, minced
1 tbsp parsley, chopped
Salt and pepper

METHOD

  1. Cook kumala in boiling water until just tender.
  2. Blanch bele leaves quickly in boiling well-salted water.
  3. Pat dry and then cool.
  4. Toss the cubed navara in a pan until lightly toasted.
  5. Lay the bele leaves on the plate.
  6. Top with the cooked beans, cucumber and kumala, the tomatoes and finally the navara.
  7. Mix the virgin coconut oil with a little lemon juice, the garlic and the parsley.
  8. Season and then drizzle onto the salad.
