Knox and Leo's Island Salad

INGREDIENTS
2 large kumala, peeled and cubed
½ small cucumber, cut into rounds
3 spring onion leaves, sliced
3 bele leaves
4 green beans, trimmed and blanched
4 small tomatoes cut, in half
½ navara, cubed
2 tsp virgin coconut oil
1 lemon, juiced
1/2 clove garlic, minced
1 tbsp parsley, chopped
Salt and pepper
METHOD
- Cook kumala in boiling water until just tender.
- Blanch bele leaves quickly in boiling well-salted water.
- Pat dry and then cool.
- Toss the cubed navara in a pan until lightly toasted.
- Lay the bele leaves on the plate.
- Top with the cooked beans, cucumber and kumala, the tomatoes and finally the navara.
- Mix the virgin coconut oil with a little lemon juice, the garlic and the parsley.
- Season and then drizzle onto the salad.
